Ingredients

    16 oz Ground beef
    1 small Onion, raw
    1 cup, chopped Green Peppers (bell peppers)
    .50 cup, chopped Carrots, raw
    14.5 oz can Del Monte Diced Tomatoes, No Salt Added
    5 cup Cauliflower, raw
    4 tbsp butter, unsalted
    4 tbsp Daisy Light Sour Cream
    3 tsp Turmeric, ground
    1 tsp Ginger, ground
    6 oz Cheddar or Colby Cheese, Low Fat


Directions

Brown grown beef drain. Add onion pepper and carrots to beef cook till soft. Add Turmeric, ginger, 1 tsp cumin and pepper to taste. Stir in a can of chopped tomatoes and cook 5 min.
Break the cauliflower into small pieces, Cook, till very soft, drain saving 1/4 cup of liquid. Blend cauliflower with butter and sour cream, add liquid if needed, to desired consistency.
In a baking dish spray with cooking spray putt ground beef mixture and top with the mashed cauliflower. Spread the cheese on top. Bake at 350 for 1/2 hr.

Serving Size: makes 6 servings
