Introduction

This is a great quick breakfast for those eating low carb diet. These can be frozen, warmed in the microwave, and dressed up with toppings. They are mildly sweet and cinnamony in flavor. If you like them more tender, leave off the psyllium powder. You can drizzle your favorite low carb extras on top for a great churro treat. I like brushing chaffles with a little butter, then sprinkling
a mix of 3/4 tsp cinnamon to 1/4 cup powdered erythritol (Serve Confectioners) per 2 chaffles. This topping is NOT included in the nutritional information!

Ingredients

    2 large Egg, fresh, whole, raw
    1.5 cup Cheese, Kroger Part Skim Mozzarella Cheese Shredded (I weigh this out, it is 168 grams)
    * 0.25 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
    1 tbsp Butter, salted
    4 Tablespoons Sweetener, Swerve Confectioners (by KINSPAPPY)
    1 tsp Cinnamon, ground
    1 tsp Vanilla Extract
    1 tsp Now Psyllium Husk Powder
    1/2 tsp Baking Powder (aluminum free)

    * can substitute 4 tsp coconut flour for Almond flour, but this may change the nutritional info.

Tips

I found this recipe on-line and doubled it, as I like to have a quick, tasty, easy breakfast and these freeze well. I like mine with sugar-free maple syrup that I buy on-line. When I make these, I only get about 5 waffles, but it can be stretched to 6 waffles by using 3 Tbs of batter per chaffle


Directions

Preheat waffle iron for 5 minutes.
Mix all ingredients together, stirring in shredded cheese last.
Put 1/4 cup in mini-waffle iron and cook for 3-4 minutes.

Serving Size: Makes 6 four inch waffles
