Introduction

I developed this recipe so we could have a plant-based pancake that would taste great and be really satisfying. I developed this recipe so we could have a plant-based pancake that would taste great and be really satisfying.
Number of Servings: 3

Ingredients

    2 medium (7" to 7-7/8" long) Banana, fresh
    1 tbsp Crisco Butter Flavor Shortening (by 13MARTI)
    1 tsp Vanilla Extract
    1 tsp Cinnamon, ground
    .5 tsp Ginger, ground
    .25 tsp Cloves, ground
    1 tsp Baking Soda
    1 tbsp *Flax Seed Meal (ground flax)
    1 cup Whole Wheat Flour
    1 cup Flour, white
    1 cup Almond Milk


Tips

These a thicker batter - if needed, thin with more almond milk.


Directions

Mash together the bananas, melted shortening, vanilla extract, spices, baking soda and flax seed.
Add the flour and milk in alternating bits. Use a heavy whisk to incorporate. Unlike most quick breads, this recipe benefits from a little extra stirring.
Preheat your griddle to over medium heat and drop by ladlefuls on hot surface.
You can also add a quarter cup of chopped walnuts, but it will add more fat and calories.
