Ingredients

    2 pounds small red potatoes, diced with skins
    4 tablespoons unsalted butter
    1/4 cup whole milk (more if needed)
    1 teaspoon kosher salt

Tips

Cream can be substituted for milk if desired for extra richness. Also, if desired, a couple of cloves of garlic can be added to the pot with the potatoes and mashed along with them.


Directions

Cut small red potatoes into quarters after washing. Do not peel except for bruised areas or bad spots. Place in cold water and bring to a boil. Add salt. Boil for 10 to 15 minutes until potatoes are tender when pierced with the tip of a sharp knife or a fork. Drain and return to hot pan to dry the remaining moisture.

Meanwhile, melt 4 tablespoons butter with milk in a small saucepan or in the microwave. Fill a large bowl with hot water and cover.

When potatoes are dry, drain water from bowl and dry well. Add potatoes along with butter and milk and mash with hand-held mixer until desired consistency. Add additional milk if needed to achieve desired consistency.
