Ingredients

.75 serving Onions, yellow sauteed 1 cup
1 cup Leeks
4 cup Baby Spinach (raw)
2 large Egg, fresh, whole, raw
2 serving Egg Substitute-Great Value (1/4 cup) (by KYBORN)
.50 cup Flour, white
.50 tsp Baking Powder
1.33 cup Milk - Skim (Non Fat)
4 oz Feta Cheese
1.5 cup, pieces or slices Mushrooms, fresh
Directions
Preheat Oven to 400F.
1. Lightly grease a 10-inch quiche/tart pan or pie plate
2. In a frying pan, cook diced onion, mushrooms and sliced leeks over medium high heat until tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes.
3. In a large mixing bowl, whisk together eggs, flour, and baking powder. Whisk in milk, then stir in spinach, mushroom, onion mixture.
4. Pour quiche into prepared pan. Top with feta cheese.
5. Bake for 25 minutes, or until center is set and the outside edge is golden brown.
6. Let set for 5 minutes, then slice and serve.
