Ingredients

1.75 cup whole milk
1.75 cup water
8 oz whole wheat elbow macaroni
1/2 teaspoon dijon mustard
5 oz American Cheese, shredded
5 oz Gruyere Cheese, shredded
Tips
I've only ever made this with full-fat milk and cheese.
This is absolutely awesome served over steamed kale.
Directions
Bring milk and water to a bare simmer over medium-high heat (If it boils, watch out! It will overflow almost instantly!). Reduce to medium-low, and add macaroni. Cook until al dente (check box for cooking time, test towards the end), stirring frequently to keep milk from burning or sticking.
Once macaroni is just at al dente, stir in dijon and American cheese. Continue stirring until nicely melted.
Off the heat, stir in the Gruyere. It won't melt right away. Cover and let sit for 5-10 minutes until Gruyere melts and can be stirred into the creamy sauce. I find this works best on a "keep warm" burner on my stove. If you don't have that, return it to a low heat if necessary to help the cheese melt.
I like this best served on a bed of steamed or sauteed kale, topped with some hot sauce!
