Ingredients

    1 cup white sugar
    1/4 cup canola oil
    2 eggs
    3 ripe bananas
    4 ounces fat free plain yogurt
    1 teaspoon baking soda
    2 cups whole wheat pastry flour

Directions

Makes 13 muffins.
In large bowl, beat sugar and oil with electric mixer. Add eggs then bananas, mixing well after each. Dissolve baking soda in yogurt. Turn mixer to low and slowly add yogurt-soda mixture; mix. Add flour and mix gently until blended. Fill muffin cups and bake at 400 degrees for 18 minutes, or more, until toothpick inserted in center comes out clean and muffins are golden brown.

    Tried them and they are magnificent. Next time I am going to try using splenda but I am sure I will regret it. - 4/19/09
