Introduction

This is a very yummy weekend delight to have. It is different from anything I have made regarding Gluten free . It was very tasty and filling for one large pancake .I topped with Ricotta quarter of cup to give some protein. When pancakes just come off the pan rub with butter on both sides , top ricotta or any cheese you like , cinnamon,nutmeg sprinkle, berry compote and than sprinkle with the powdered sugar . Ingredients

    .5 cup Water, Filtered
    .5 cup, unsifted Powdered Sugar
    2 cup Berries, frozen (Raspberries, Blackberries & Blueberries)
    .33 tbsp Lemon zest, grated (by SEPHONEE)
    sprinkle of cornstarch to thicken compote
    1 large Egg, fresh, whole, raw
    .75 serving Milk: Buttermilk (1 c.) (by MUMRAAA)
    .5 cup Rice flour, white
    1 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    .33 cup Arrowroot flour
    2.5 tbsp, unsifted Powdered Sugar
    1.5 tsp Baking Powder
    1 tbsp Butter, unsalted
    5 serving simply balanced organic EVOO cooking spray
    5 tbsps half &half



Tips

I made the compote first and mixed flours in bowl and got all ingreds. and measuring tools ready. Read through instructions so you can know what is next.


Directions

To start with the berry compote. Take water and sugar in a medium saucepan over med. heat. stir until sugar dissolves than lower to low med. Add berries until soften. It should get thicker if not sprinkle some cornstarch and that will help. Take off heat and sit in zest. Set aside to cool.
Next: to make the pancakes. Combine flours,arrowroot, baking powder, and whisk until well mixed. Make a well in center and pour egg and milk mixture. If you don't have buttermilk. I make my own by put 3/4 cup of the milk and taken out 1 tbsp than add 1tbsp of lemon juice stir and let sit for a few mins. Gradually move flour over the egg/milk mixture until combined. Stir in melted butter and stir well than cover for 15 min.
Prepare the pans with spray over low heat. Add .quarter of a cup of batter to each pan and tilt it to spread the mixture to get 3 to 4 inch diameter. Cook for 1 to 2 mins. until bubbles start to appear. Flip pancake than place on plate. take pan off burner. Rub the pancake with butter on both sides. Proceed to do all pancakes . When done top with compote , drizzle of half and half , and powdered sugar. You can also try my version which is a treat.
