Introduction

This a a wonderful Low Calorie side dish.I use 3 kinds of mushrooms, you can use whatever mushrooms you like. I found I was not getting enough complex carbs, so I made this up. Ingredients

    2oz White Mushrooms
    1oz Portobello Mushrooms
    2oz Crimini Mushrooms
    2Tbls Garlic, minced
    1tsp black pepper
    1Tbls Mrs Dash Original Seasoning
    2Cups Long Grain Brown Rice (not instant)
    1Cup Water
    4Cup Low Sodium Chicken Broth (vegetarians can use vegetable broth instead)

Directions

Roughly chop mushrooms. In 5qt saucepan combine all ingredients. Bring to a boil, reduce heat to low and simmer 45 minutes or until all water is absorbed. Make approximately 12 1/2cup servings.
