Ingredients

    1 tbsp Milk, 3.25%
    2 large Hard Boiled Egg
    1 tsp Pepper, black
    0.50 tsp Salt
    3 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
    1 cup Peas, frozen
    1 cup, halves and whole Cashew Nuts, dry roasted (salt added)
    3 serving Hellmann's , Light Mayonnaise, 1 Tbsp
    1 cup cucumbers, with peel, raw
    1 cup Grapes, Red or Green seedless 25 grapes
    2 serving Yogurt Chobani Greek Yogurt Plain, Non-fat
    3 serving Ocean Spray, Craisins Original Sweetened Dried Cranberries 1/4 cup

Tips

You can replace the cucumber with celery. This is not spicy, but you can use a hot curry powder like Garam Masala if you prefer more heat. Or add cayenne or other hot peppers.


Directions

In a small bowl mix yogurt, milk, mayo and spices. Set aside. Chop or dice chicken, egg, and cucumber into small pieces. In a large bowl mix all but the liquid in the small bowl. Then add the liquid and fold until everything is well mixed. Cover and chill for at least 2 hours or overnight.

This will make twelve .75 cup portions or 8 one cup portions.
