Ingredients

    1/4 cup almond meal
    2 eggs
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp ginger
    1 serving stevia
    1/3 cup butter
    1/2 cup, grated Carrots, raw
    half can (398 ml) Pumpkin Puree no sugar added - (Whole Can)

Tips

do not beat almond flour to much as it causes it to dry out. and not be as fluffy


Directions

whip eggs until well blended
add Pumpkin mix well
add shredded carrots
melt butter in microwave
add to mixture
add spices & stevia
add almond flour

cover cookie sheet with parchment paper
add six to eight pancakes , round slightly pat down
put in preheated oven for 15-20 minutes until brown

remove from over transfer pancakes to plates

Serving Size: makes 6 to 8: 6 inch pancakes
