Ingredients

    8 oz. shredded mozzarella cheese
    1/2 cup almond flour
    2 T butter, melted
    4 large eggs
    1/8 to 1/4 cup granulated erythritol
    2 tsp. vanilla extract
    2 tsp. psyllium husk powder

Tips

Waffles become more firm as they cool. They reheat well.


Directions

Preheat waffle iron.

Mix all ingredients until well combined.

Place 1/4 of batter into the iron and bake for approximately four minutes. Repeat with the next quarter of the batter.
