Introduction

Use any kind of mushrooms and any kind of winter squash. Cheese pumpkin is great. Use any kind of mushrooms and any kind of winter squash. Cheese pumpkin is great.
Number of Servings: 6

Ingredients

    6 cup, mashed Pumpkin, cooked
    2 cup, pieces or slices Mushrooms, fresh
    1 cup Half and Half Cream
    2 clove Garlic
    8 oz Swiss Cheese, grated

Directions

If using a whole pumpkin, cut top off and save. Remove all seeds and stringy fibers. Add crushed garlic, mushrooms and half and half. Salt and pepper to taste. Bake for 1-2 hours. If using canned pumpkin, sauté garlic in a little oil for a few minutes then add remaining ingredients. Cook on low for 1 hour. Grate cheese to serve on top of soup. Serving Size: Makes 4-6 servings
