Introduction

Sometimes, not often, I don't want chocolate. Lemon...mmmmm. Sometimes, not often, I don't want chocolate. Lemon...mmmmm.

Ingredients

    2 cups Almond Flour
    .5 cup Coconut Flour
    .5 cup Whey Protein Isolate, Natural Unflavored
    .5 tsp Salt
    .5 tsp Baking Soda
    1 stick Butter
    4 large Egg, fresh, whole, raw
    .5 cup Sour Cream
    1.25 cup xylo sweet
    1 Lemon (Juice from, and zest if you want it really lemon-y!)

    Note: If you want to glaze these you'll need a cup of powdered xylosweet and a little more lemon juice. If you add blueberries, you'll need 1 or 2 cups, depending on whether you want to add them to half the recipe or the entire batch. The blueberries add less than a carb to each cake if you make 48.

Tips

These are just over 1 net carb each as described. A couple of things you might try is half plain lemon, and adding 1 cup of blueberries to the rest. If you use frozen, just thaw and rinse them first and fold in gently. It will add just under a carb to each from the natural fruit sugar. Takes about five minutes more in the oven with the blueberries.

You can also add some glaze while they cool, if you want them to be positively decadent. Also adds a tad more carb, to just under two per, but worth it. The glaze is simple, powdered xylosweet, 1 cup. Add fresh lemon juice til it's drippy consistency, but not soaking wet; you want to drizzle, not pour. I do this in a sandwich size ziplock, use the bag to work with my fingers from the outside til completely mixed, then I snip a really tiny corner off and use the bag to drizzle over the cooling cakes while still a bit warm. So good.

You can make your own powdered in a Bullet mixer or food processor, just pulse it a few times. It only takes a couple seconds, then let the dust settle before you open it and store it in an airtight container. Works for glaze, frosting, easy dissolving sweetener. You can use less with it, too. SO much cheaper than buying powdered xylitol.


Directions

One bowl. Mix room temp butter and xylosweet first, then add the rest...mix and scoop into a silicone mini cupcake mold pans...I use two 24 hole molds. Bake 20 minutes til barely browned and toothpick comes out clean. Cool on rack.

Serving Size: Makes 48 mini cupcake size 1 carb yummies.
