Ingredients

    4 slice Mori-Nu, Tofu, silken, extra firm
    1 cup 365 Organic Quinoa
    2 tbsp Coconut Oil
    3 tbsp Nakano Seasoned Rice Vinegar
    2 tbsp Peanut Butter, smooth style, with salt
    2 tbsp Soy sauce (tamari)
    2 tbsp Honey
    .6 cup Peanuts, dry-roasted
    2 serving Broccolini - 8 stalks (by IONLYDOGPADDLE)
    3 tbsp Coconut Flakes, Organic, Unsweetened
    0.5 fruit (2" dia) Limes

Tips

I accidentally used 2 Tbsp honey instead of 2 tsp and it tasted great! Also, I did not add the extra coconut oil to the quinoa in order to save calories and I did not miss it one bit. Instead I didn't reduce the sauce as much as indicated and was able to mix it into the dish to add flavor.
