Ingredients

    2 cup, sliced Zucchini
    2 serving Tomatoes, Roma, Fresh, 1 Med
    1 cup pasilla chile (by DCOOPER01)
    1 tbsp Extra Virgin Olive Oil
    1.5 cup kernels Yellow Sweet Corn, Frozen
    3 serving Purple Onion Rings 1 svg = 2 rings

Tips

You can use less chile, zucchini, tomato or corn to suit your taste


Directions

In cooking pot, add chopped zucchini and tomato along with chopped onion that has been sauteed in olive oil. Roast pasilla chile until charred and remove blackened area. Slice chile and add to the rest of the ingredients. Season with salt and pepper and cook on stove top until done.
