Ingredients

2 6-oz Pacific Halibut steaks
6 oz good spring water
3 tbsp soy sauce
6 oz sake
3 tbs mirin
1 tbs sugar
1 inch of ginger, thinly sliced
1 tbsp garlic, minced
Directions
In a medium pot, bring water, sake, soy sauce, mirin, and sugar to a boil.
Add ginger, onions, and halibut.
Place a paper towel or parchment paper over the fish, cover the pot with a lid, and bring back to a boil. Reduce the heat to low and gently simmer until translucent and flaky, approximately 5 minutes.
Remove fish and continue to cook until the simmering sauce is reduced by half.
Spoon some of the sauce over the fish and serve the remainder on the side.
