Ingredients

    1 cup Ancent Harvest's Quinoa, Traditional, Organic (1/4 cup dry / 46 grams)
    1 serving Pacific Natural Foods Organic Vegetable Broth, 1 cup
    7.5 serving Bushs Black Beans
    2 cup Del Monte Petite Cut Diced Tomatoes
    1.2 cup Enchillada Sauce - Red (4 1/2 servings per can) (by MKL42274)
    2 cup Yellow Sweet Corn, Canned
    3 tbsp Ortega taco seasoning mix

Directions

Rinse quinoa. Add all ingredients to crockpot. Cook on high for 3 hours, watch quinoa so it doesn't get mushy. Serve with corn or flour tortillas and your favorite topping: queso fresco cheese, cilantro, diced avocado, fresh lime.
