Ingredients

    1.5 cups whole milk
    2 large eggs, beaten
    1/2 cup pure maple syrup
    3 cups old-fashioned whole oats
    1t baking powder
    1.5t ground cinnamon
    1/4t ground nutmeg
    1t vanilla extract
    1/4t salt
    1 heaping cup chopped apple
    optional: 1/2c chopped walnuts or pecans
    optional: coarse sugar for topping

Directions

Preheat oven to 350 degrees F. Generously spray a muffin pan with nonstick spray.
Whisk all ingredients together except apples in large bowl. Fold in apples and nuts, if using. Spoon or ladle batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top. If desired, sprinkle tops with coarse sugar.
Bake for 25-30 minutes or until edges are lightly brown & top appears set.
Cool for 5 minutes before serving. Cover and refrigerate leftover muffins for up to one week.
