Number of Servings: 8

Ingredients

    4 large whole (3" dia) Tomatoes, sliced
    3 oz Crumbled Goat Cheese
    1 Pillsbury 9" Refrigerated Pie Crust
    1 medium (2-1/2" dia) Onions, sliced
    1/4 c pesto Trader
    fresh thyme or other herb seasoning
    salt and pepper to taste

Tips

let tomato juice drain as you slice them to prevent tart from getting soggy.


Directions

Preheat oven to 400 degrees.

1 - Roll out crust into pie pan.
2 - spread pesto on bottom on crust
3 - add sliced onions
4 - place tomatoes on top of onions
5 - sprinkle with goat cheese
6 - add salt, pepper and thyme

Bake 35-40 min until crust is golden brown.
