Ingredients

    1 large Hard Boiled Egg
    1 slice (6 per 6-oz pkg.) Canadian Bacon
    1 tsp Grey Poupon Dijon Mustard
    1 tsp Green Onion, diced
    .25 cup Sweet potato, cooked and mashed
    1.5 tsp Milk, nonfat (skim milk)

Directions

In small bowl, mix sweet potato and milk until creamy.

Place a piece of bacon and generous spoonful of sweet potato mixture on each egg slice.

Top with a dollop of mustard and sprinkle of green onions.

Serving Size: makes 1 4-piece serving
