Ingredients

    2 cup Bob's Red Mill Old Fashioned Whole Grain Rolled Oats
    2.5 cup Organic All-Purpose White Flour
    .75 tsp Salt
    1 tsp Baking Soda
    .25 tsp Cardamom, ground
    .5 cup, chopped Pecans
    0.5 cup Trader Joe's Orange Flavored Dried Cranberries
    2 serving jumbo eggs
    1 cup, unpacked Brown Sugar
    48 tsp Lakanto Monkfruit Sweetener with Erythritol
    1 cup Butter, unsalted

Tips

Let butter and eggs get to room temperature before starting.


Directions

1. Preheat oven to 375°F
2. In a large mixing bowl cream the butter, then add sugar and eggs, whip until the batter is light and fluffy.
3. In a separate bowl sift together all remaining dry ingredients: flour, baking soda, salt, cardamom, pecans, cranberries, & oatmeal.
4. Thoroughly combine the batter and dry mix until all the flour is absorbed.
5. Use an ice cream scoop to portion cookie dough onto cookie sheets.
5. Bake for 15 minutes.
