Introduction

This is a full fat recipe that allows a more spreadable result. For lower fat, pork can be drained prior to adding additional ingredients and omitting leaf lard. Ingredients

    1 1/2 lbs Pork, fresh, ground, raw
    4 tbsp Leaf Lard
    1/4 cup, chopped Onions, raw
    1/2 cup Milk, 3.25%
    Water to cover
    1 tsp salt
    1/2 tsp+ pepper
    1/2 tsp+ cinnamon, ground
    1/2 tsp+ cloves, ground
    1/2 tsp+ allspice

Directions

Break up the pork in medium/large saucepan. Add remaining ingredients except cinnamon, cloves and allspice to saucepan and let simmer for about 2 hours, stirring occasionally. Add additional water if necessary to avoid burning. When well broken down and most of water gone, add the spices and stir well. Leave over very low heat until all water is absorbed. Transfer to food processor to smoothe out like a pate. Transfer to smaller storage containers. Can be frozen.

Serving Size: 24 1 oz servings spread on toast or english muffin
