Introduction

This makes 2 quiches, one for now, and one to freeze for later. This makes 2 quiches, one for now, and one to freeze for later.
Number of Servings: 12

Ingredients

    2 deep dish 9" pie shells, not baked
    1 lb cooked ham, diced (can also sub gr. beef)
    1 pkg frozen chopped spinach, thawed & drained
    1 c. lowfat mayo
    1 c. lowfat milk
    4 eggs, beaten
    2 Tbsp cornstarch
    2 c. shredded cheddar cheese (or other fav cheese)
    1 med. onion, chopped
    salt & pepper to taste

Directions

Dice cooked ham (or brown ground beef and drain).

In a large bowl, blend mayo, milk, eggs & cornstarch until smooth. Then stir in spinach, meat, cheese and onion. Season with salt & pepper.

Note about servings: each pie should have 6 slices.

Pour equally into two pie shells. Bake at 350 for 45 minutes or until knife comes out clean in the center.

If freezing, be sure to thaw in the fridge overnight before cooking.
