Ingredients

    5 roma tomatoes (large)
    1 cucumber, long english
    1 bell pepper, yellow
    1 bell pepper, red
    1 bell pepper, orange
    1/2 Onion, red (medium)
    3 servings crumbled feta cheese - Saputo (3cm cube per serving)
    4 tbsp Olive Oil, extra virgin - Co-op Gold
    5 tsp oregano leaves, dried
    juice of one whole fresh lemon

Directions

Dice vegetables (1-inch pieces). Mix all ingredients. Let sit for 30 minutes at room temperature to allow flavours to blend.
