Ingredients

2 Tbsp Olive Oil
16 oz Bob Evans Zesty Hot Sausage (by WNDYMAY)
2 stalk, large (11"-12" long) Celery, raw
1 cup, chopped Carrots, raw
1 cup, chopped Onions, raw
2 cloves of garlic - minced
1 tsp. Italian Seasoning Spice Mix
64 oz Kirkland Chicken Stock
2 cup Red Lentils (dry) rinsed
Tips
You can make this in the Instapot by turning it on high pressure for 30 minutes and allowing a natural release.
Directions
1) Over medium heat, add olive oil to a heavy bottomed stock pot
2) Brown Sausage until mostly cooked through
2) Add in onion, garlic, carrots, celery and italian seasonings and sauté for a 3-5 minutes or until softened
3) Add in the lentils
4) bring to a boil and then turn down
5) Simmer for 3 hours.
