Introduction

Ingredients

1-14.75 oz can of Pink Salmon, drained except for 2 Tbsp.
2 cups soft bread crumbs
2 eggs
1/4 cup milk (I used 1% low fat)
1 dash black pepper
1/3 cup finely chopped onion
2 tbsp parsley
3 tsp lime juice (recipe called for lemon juice; I didn't have any)
Tips
Obviously much can be done to this recipe. An additional method of cooking is to make 8-1" thick patties and pan fry them.
Directions
1. Drain salmon, reserving 2 Tablespoons.
2. In a bowl, flake the salmon thoroughly.
3. All all of the other ingredients and mix well.
4. Place in a well-greased 8-1/2"x4-1/4"x2-1/2" loaf pan or shape into loaf on a greased baking sheet.
5. Bake at 350 degrees for 45 minutes or until done.
