Ingredients

    12 serving 1 Egg- large, fresh
    3 oz Cheese, Parmesan (Parmigiano Reggiano) Academia Barilla
    2 slice (1 oz) Swiss Cheese
    9 serving Costco Bacon = (1 bacon slice is a serving) (by BIGRT1)
    .5 cup, chopped Onions, raw
    .75 cup, pieces or slices Mushrooms, fresh
    4 Tbsp Fage sour cream (by VFR4US)

Directions

Preheat oven to 400 degrees. Chop onions, slice mushrooms and set aside. Chop bacon to small pieces, add to medium pan on stove, cook on medium high heat until desired doneness. Remove bacon from pan, drain bacon grease, reserving 2-3 tablespoons in the pan. Add to pan onions and mushrooms, cooking on med to med-low heat, stirring occasionally until soft. Grate cheeses and set aside. Crack eggs and combine with sour cream, whisking briskly until mixed well and no lumps of sour cream are visible. Once onions and mushrooms are done, add bacon back, then add egg mixture and all of cheese. Stir to distribute all ingredients evenly. Place in oven for 15-20 minutes or until top is golden and no longer jiggly.
