Introduction

This is quick and easy recipe that tastes fantastic! It is very filling, I was surprised to learn how low in calories it is! This is quick and easy recipe that tastes fantastic! It is very filling, I was surprised to learn how low in calories it is!
Number of Servings: 10

Ingredients

    8 cups Potatoes, peeled and sliced
    1 cup Celery, diced
    1 cup Onion, chopped
    3 Tbsp Butter
    10 cups Water
    1/4 cup Cornstarch
    2 cups 1% Milk

Directions

Saute the onion and celery in the butter until onions are translucent.

Put water and potatoes in a large pot, bring to a boil. Add celery and onions, reduce to medium heat. Cook until potatoes are soft.

Mix the cornstarch into the milk till there are no lumps, then add to soup.

Simmer for 5-10 more minutes, and you're done!

Add parsley or other herbs if desired.
Add salt and pepper to taste.

Makes about 20 cups - ten 2 cup servings.

    This is a very nice potato soup. I have enjoyed potato soup since I was a wee child. Glad it also tastes good to me when other things do not during my cancer recovery. - 8/17/13

    Incredible!
    Family just loved this soup. I used canned diced potatos and added some diced carrots. Then i cooked it in the slow cooker, - 7/13/09
