Introduction

Number of Servings: 25

Ingredients

    1 lb firm plum (roma) tomatoes
    1 C extra virgin olive oil
    1/4 C balsamic vinegar
    1/4 C shallots or green onions, finely chopped
    1 tsp. raw honey
    2 Tbsp. fresh basil, finely chopped (or 2 tsp. dried basil)
    1 tsp. fresh oregano, finely chopped (or 1/4 tsp. dried oregano)
    1 Tbsp. parsely, finely chopped
    2 Tbsp. expeller-expressed flax oil

Directions

Wash and dry tomatoes. Brush with olive oil and set in a shallow glass pan. Roast in a 400 degree oven about 30 min or until skin begins to blister. Cool completely. Chop and set aside.

Whisk remaining ingredients except flax oil together in a bowl and season to taste with sea salt and pepper. Stir in tomatoes. Let dressing sit an hour or so to amalgamate flavors. Just before serving, stir in flax oil. Store leftover dressing in refrigerator.
