Ingredients

    .75 cup, chopped Onions, raw
    1 serving Chillies, Green Chopped HT 2 T (by SEARCY1945)
    1 tsp Ginger Root
    1.5 cup Boiled & mashed potato
    .5 tsp Cumin seed
    0.5 tsp Mango powder
    2 tbsp Cilantro
    6 slices Whole wheat bread
    9 serving Tomato Slices 1 serving = 1 slice
    90 grams Cheddar Cheese
    2 tbsp Butter, unsalted
    1.5 cup Boiled & mashed potatoes
    .5 tsp Turmeric, ground

Directions

Boil potatoes. Mash and add all the spices and seasonings - green chillies, ginger, cumin seed, mango powder, cilantro.

Heat 2 to 3 tbsp oil (preferably coconut oil) in a wok or any pot and add the chopped onions. Add about 1/4 tsp of salt and stir fry until soft for about 3 to 4 minutes. Turn off stove and add turmeric powder. Add the boiled potatoes mixed with the herbs and spices. Mix the onions and potatoes and set aside.

Butter slices of bread on one side. Put seasoned mashed potato and press the potato mix with a spatula so it sticks to the bread. Apply some melted butter on the potatoes. Make sure to distribute the potato stuffing evenly for 3 sandwiches.

On a heated grill pan toast the bread slices with the potato side down. After 4 minutes flip the bread. Put 3 tomato slices and 30 grams of grated cheese on top of one of the bread slices. Put another toasted bread with the potato side down onto the tomato and cheese. Press the bread slices together with a spatula.

Once toasted and brown put this on a serving plate. You can drizzle any of your favourite hot sauce on top of the sandwich for a garnish and serve.
