Ingredients

    8 ounces Chicken Breast (cooked), no skin, roasted
    1 cup, pieces or slices Mushrooms, fresh
    .25 cup, diced Celery, raw
    1 cup, sliced Zucchini
    1 cup yellow squash
    1.33 cup Potatoes, Diced, Canned, Great Value (by GREENACRES2599)

Tips

Make sure the olive oil in both pans is hot before adding the chicken or the potatoes.


Directions

Dice and season the chicken breast. Cook in hot olive oil until browning. Cut the zucchini, yellow crooked neck squash, celery, and mushrooms and add to chicken. Drain the juice off the potatoes and cook in hot olive oil in a separate pan. Once brown, add to the chicken and mushroom mixture. Cook all together until golden brown and cooked down. Season with salt, pepper, and garlic salt for flavor.

Serving Size: Makes 2 (1 cup) servings

    I will never use canned potatoes again. this is a great spot for baked potatoes leftover. So you will have to slice or cube them before cooking in hot olive oil. - 2/27/21
