Ingredients

    1.5 cups dry Quinoa
    1.71 cups Coconut Milk (13.66 oz can)
    1 tbsp Penzey's Vindaloo spice blend

Tips

Try with different curry blends, or with tomato sauce instead of coconut milk for many varieties that go with many different meals.


Directions

Rinse Quinoa, add to rice cooker, and stir in Vindaloo powder until grains are well coated.

Add 1 can coconut milk, and cook on "quinoa" setting.

Serve with other Curry dishes, as a side, etc. 1/2 cup per serving.
