Introduction

This is a great recipe when you're short on time, but looking for flavor. I make mine with store bought pinapple salsa, but feel free to use your favorite flavor or make your own salsa. Ingredients

    1 15-oz can black beans
    1 cup pineapple salsa
    3 whole wheat tortillas
    1/4 c. 2% shredded cheddar cheese
    Cooking spray
    reduced fat sour cream (optional)

Directions

Pre-heat broiler. Drain and rinse black beans. In a bowl, mix beans with salsa. Lay tortillas on a baking sheet place about 1/3 cup of bean mixture on each tortilla. Sprinkle each tortilla evenly with cheese. Fold each tortilla in half and coat top with cooking spray. Place under broiler for 3 minutes, or until they start to brown on top. Remove and cut into thirds. Serve with reduced fat sour cream or desired toppings.
