Introduction

Ingredients

    2 medium onions, diced
    2 cloves garlic, diced
    1 cup Hunt's tomato sauce
    2 boneless skinless chicken thighs, baked
    1 tbsp dxtra virgin olive oil
    2 tbsp curry powder
    0.5 cup frozen peas

Tips

Start rice steaming before making the curry, it will be ready when your curry is cooked!


Directions

Saute onions and garlic in oil. Add tomato sauce and curry powder. Simmer until onions are soft and sauce loses sharpness, maybe five minutes. Cut up chicken thighs, add and simmer. Add peas when almost ready to serve, heat until peas are hot.

Serve over jasmine rice, or over brown rice if you want more fiber.
