Ingredients

    6 large Egg, fresh, whole, raw
    1.5c stir fry vegetables (Walmart's Great Value)
    0.5c cottage cheese, Walmart's Great Value, 1% Lowfat
    0.5c shredded Cheddar Cheese
    0.5t Baking Powder
    0.5t Mrs. Dash (R) Original Blend

Directions

Preheat oven to 350.  Spray red muffin tin with cooking spray and place on cookie sheet. Whisk eggs.  Stir in other ingredients. Divide mixture evenly into muffin tin.  Bake for 20-25 minutes until eggs are puffed up and cooked through.

Serving Size: Makes 12 muffins, 2 muffins per serving
