Introduction

When I crave creamy, cheesy rice this is what I make. Great as a side dish for any meal or occassion. Only takes a couple of minutes to make. This is also great to add other veges to besides just spinach. Carrots and celery work well in it too. When I crave creamy, cheesy rice this is what I make. Ingredients

    3c Instant Rice (I used white, brown works great too)
    1/2c Healthy Request Cream of Mushroom Soup
    1/2c Reduced Sodium Chicken Broth
    2.5tbsp Reduced fat or No fat cream Cheese
    1/4 of 10oz package of Frozen Spinach
    1tbsp Garlic Powder
    1/2 tbsp Parsley
    Salt & Pepper (to taste)

Directions

Put rice into a microwave safe bowl and add chicken broth until the rice is just barely covered. Cook in microwave for 2 minutes or until broth is absorbed by the broth.
Let sit for 1 minute. Then, add the cream of mushroom soup, cream cheese, garlic powder, parsley, salt & pepper to taste
Stir until all ingredients are combined & cream cheese is melted into the rice
