Ingredients

For the Chicken
24 ounces Chicken Breast (cooked), no skin, roasted
2 tbsp Extra Virgin Olive Oil
1 tsp Italian seasoning
2 tbsp Balsamic Vinegar
3 clove Garlic, minced
.75 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
For the Bruschetta
1.5 cup Tomatoes - sm cherry tomatoes - halved
3 clove Garlic, minced
0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz), chopped
.33 tbsp Balsamic Vinegar
.33 tbsp Extra Virgin Olive Oil
8 tbsp Basil, chopped
.5 tsp Salt
Directions
Spread the chicken into a 9x13 baking pan.
Add the oil, balsamic vinegar, garlic, Italian seasoning, and salt to a small bowl and whisk to combine.
Pour over the chicken and turn the chicken to coat.
Let chicken set 10 minutes while the oven heats to 425 degrees
Bake chicken for about 25-30 minutes or until 165 degrees by meat thermometer.
While chicken is baking, add all the ingredients for the bruschetta to a bowl and toss to combine.
When chicken is cooked, remove from oven and top with Mozzarella cheese.
Pour the Bruschetta mixture over the chicken and return to oven for 5 minutes to melt the cheese and warm the tomatoes.
