Introduction
I made a soup that called for 1/2 cans of kidney, pinto, and garbanzo beans. What to do with the rest of the beans? I threw together a rather tasty bean salad. Not to sour, not too sweet! Ingredients

1/2 of a 15 ounce can of kidney beans
1/2 of a 15 ounce can of pinto beans
1/2 of a 15 ounce can of garbanzo beans
3 oz carrots chopped
1/4 Apple Cider Vinegar
1 tsp sugar
1 Tbsp cilantro, chopped
2 tsp minced garlic
2 Tbsp chopped onions
Black pepper to taste
Directions
Toss all ingredients together, stir, let marinate in the fridge for an hour or so. Nice 1/2 cup servings for something off the grill!
