Introduction

Fish stock cubes can be tricky to find, but adds an amazing richness to this dish. Fish stock cubes can be tricky to find, but adds an amazing richness to this dish.
Number of Servings: 3

Ingredients

    2 medium onions, chopped
    0.5 tbsp olive oil
    1 can chopped tomatoes
    2 fish stock cubes
    1/2 - 1 cup water
    1 tsp dried tarragon
    400 grams cod fillet

Directions

Soften the onions in the olive oil in an large, deep frying pan.Add tomatoes, stock cubes, tarragon and water, let simmer for 20 min.
Transfer all of above to liquidizer or use a hand held mixer. Puree until smooth. Return sauce to frying pan.
Add fish fillets, and simmer gently until fish flakes easily and is cooked through. Serve with plain rice.
