Introduction

Really easy, this has no sweetener in it at all, but it is super flavorful. And a big bowl of it keeps for several days covered in the fridge. If you're like us, it won't last that long. Ingredients

    * Cucumber (peeled and seeded), 4 cups chopped
    * Nonfat plain Yogurt, 1 lb
    * Lemon juice, 2 tbsp
    * Onions, raw, 1 cup, chopped
    * Dill weed, dried, 2 tbsp
    * Pepper, black, to taste
    *Salt, to taste

Directions

Wash, peel and seed the cucumbers (about 3 medium sized cukes--you can seed them with a melon baller really easily). Chop them in a nice sized chunk--about quarter to half inch in width. The onions should be chopped much smaller than the cukes, and it works best with sweet, Vidalia-type onions. One medium-sized onion is usually sufficient.

Add the rest of the ingredients and stir well. Makes about 10 one-cup servings. Best served in a bowl, and I'll often use a spoon to get all the yogurt dressing. Sometimes, I'll mix in about 3 ounces of well-drained water-packed tuna just to my own single portion, and I'll have a nice light lunch, with gobs of protein, no sugar, and very little fat. When I'm making it for company, I'll julienne carrots and dice red bell pepper and throw that into the mix without any tuna. Always gets raves!
