Another way to use up summer zucchini & squash! Another way to use up summer zucchini & squash!
Number of Servings: 16

Ingredients

    2.5 c flour
    0.5 c cornmeal
    1 t (dried) oregano)
    1 T (baking powder)
    0.25 c Splenda
    1 can Campbell's condensed cheddar soup
    1.5 cups grated zucchini/squash
    0.5 c non-fat milk
    3 egg whites
    0.25 c unsweeted applesauce

Directions

Preheat oven to 400 degrees. Mix dry ingredients and wet ingredients in separate bowls. Add wet to dry and mix until moistened. Use non-stick spray on muffin pans (regular size). Makes 16 muffins.
