Introduction

Whipped this up with leftover steamed chicken breast. Could use capers in water in place of olives, or skip both and use freshly diced apple or raisins and add curry powder to the mayo. Ingredients

    3 oz steamed chicken breast, chopped
    1/4 cup red onion, finely diced
    2 large green olives, finely diced
    2 Tbs mayo made with canola or olive oil
    2 tsp spicy brown mustard
    1 tsp Worcestershire sauce
    1/2 tsp each, turmeric, garlic powder, celery seed, ground pepper.
    Pinch of cayenne pepper
    salt to taste


    10-15 large cucumber slices, about 1/4 inch thick, sprinkled with salt, pepper and garlic powder
    1 med. ripe tomato, in slices cut in half. Chop the ends into small dice and add to salad, along with juice from cutting.

Directions

I use this as 1 serving, as a complete meal, and the calorie information is calculated for that.
You will have about 1 cup of the chicken salad total.

Cube the chicken into a small dice.
Finely dice the onion and the olives and ends of the tomato.
Mix all the ingredients for the salad into a bowl and let marinate together for a few minutes to blend.

Cut large, 1/4" thick cucumber circles. These are the "crackers" on which to serve the salad.

Place half of a thin slice of tomato on each slice of cucumber. Season the cucumber slices with salt, pepper, garlic powder (and a touch of cayenne or chipotle if you want spicy)

Put a spoonful of the chicken salad on each cucumber slice and eat like finger food.

Alternately, this chicken salad can be used in romaine roll ups. In which case, dice all the tomato and include in the salad. Dice the cucumber and either add to salad or add a spoonful on top of the salad inside the rollup.

Take several large leaves of lettuce, place 2-3 spoonfuls of the salad along the rib of the leaf. Tuck the ends in and roll the lettuce leaf around the salad, and eat like a spring roll.
