Ingredients

    1 Lb. Ground beef, lean,
    Zucchini, 1.5 cup, sliced)
    1 Can Stewed Tomatoes
    1.5 Cup Onions,, sliced
    !/2 Cup Green Pepper, sliced thinely
    2 Tsp. Garlic,
    1/2 Tsp. Basil
    1/2 Tsp. Oregano,
    1?2 Cup Fresh Green or Yellow Beans
    3 Cups Cooked Brown Rice


Directions

Chop: Zucchini, Onions and Gr. Pepper
Brown Gr. Beef in a skillet
Drain off fat
To skillet Add: Zucchini, Onions, Green Pepper
Green Beans, Tomatos,Garlic,
Basil and Oregano
Simmer for about 30 minutes till Vegetables are tender and sauce is somewhat thick
Serve with Parmesan Cheese sprinkled on.
Serve as a Stew with hard rolls or over the Brown Rice with a green salad

    Very Good
    I added Creole Seasoning and lightly sauted the veggies. Very good gumbo type dish. - 8/16/10
