Introduction

Very moist, flavorful zucchini bread that has almost no fat, thanks to egg replacement and applesauce. Makes a great breakfast or snack item. My kids inhale it! Ingredients

    egg substitute: 3/4 cup
    applsauce: 1 cup
    granulated sugar : 2 cups
    SHREDDED zucchini: 2 cups
    vanilla extract: 1 tablespoon
    baking soda: 1 teaspoon
    cinnamon: 1 tablespoon
    nutmeg: 1 teaspoon
    salt: 1 teaspoon
    flour: 3 cups

Directions

Mix in order. Bake in small greased & floured loaf pans @ 350 degrees for 30-35 minutes. Makes 4 small loaves cut into eight slices each. One serving=1 slice.

    This has helped my late afternoon hunger with a low-cal, low-fat yet very satisfying option. I like that it is very moist as well. I made it with half sugar/half Splenda and half white flour/half whole wheat flour. Turned out great!!! - 2/26/09

    I made these last night, with 1/2 c less sugar, and used 1/2 and 1/2 white and whole wheat flour. They were FANTASTIC!!!! - 7/7/09

    Very tasty, I used real eggs instead of egg replacer and I used half whole wheat flour and half white unbleached flour. They turned out very tasty and I love having extra loaves to freeze for later. Thanks! - 2/1/09

    I thought it was good, but unGODly sweet (and I didn't use the full 2 cups of sugar). Next time I plan on cutting the sugar down to 1.5 or maybe even 1.25 cups. Other than that, very moist - good recipe :) Oh, and used all whole wheat flour instead of white flour. - 7/14/10
