Introduction

A delightful summer treat that is low in calories and a tasty way to get your vegetables in! I could eat these every day! A delightful summer treat that is low in calories and a tasty way to get your vegetables in! I could eat these every day!
Number of Servings: 6

Ingredients

    1 medium onion
    20 medium mushrooms
    2 bell peppers of different colours
    1 medium zucchini
    1 medium yellow summer squash
    1/4 cup of marinade

Directions

Cut all the vegetables into large, bite-sized chunks.
Toss them in any kind of marinade you like until well coated (I use my own Smoky Tofu Marinade)
Alternate the vegetables on skewers.
Grill on a barbecue until the vegetables are tender and just beginning to blacken, turning occasionally as they cook.
Usually take about 10-15 minutes depending on how hot the BBQ is.
Makes about 12 skewers. One serving is 2 skewers.
