Introduction

I make this coffee cake for play dates at our house. Kids and Moms all love it and it's a cinch to put together. I make this coffee cake for play dates at our house. Kids and Moms all love it and it's a cinch to put together.
Number of Servings: 20

Ingredients

    2 cups all purpose flour
    2 cups organic cane sugar, divided
    2 tsp baking powder
    1/2 cup butter
    2 large eggs
    1 cup milk
    2 cups fresh or frozen blueberries (do not thaw)
    1 tsp cinnamon

Directions

Preheat oven to 350* F.

Combine flour and baking powder with 1 1/2 cups of sugar. Cut in butter until mixture is crumbly. Add eggs and milk and beat until smooth (a few small lumps are okay)

Pour into greased 9x13 baking pan. Sprinkle blueberries over batter. Combine remaining 1/2 cup of sugar with the cinnamon, then sprinkle over the top of the blueberries.

Bake 35-40 minutes or until it starts to get golden and the sugar crisps up on top, and it passes the toothpick test.

    I used whole wheat white flour a 1/2 cup brown sugar for part of the sugar in the batter. I had frozen cranberries on hand, so I used them in place of the blueberries. My family loved it and we felt the cranberries gave an extra bite and was a perfect blend with the sugars. - 1/26/15
