Introduction

Ingredients

    Mushrooms, fresh, 1 cup, pieces or slices
    Garlic, 2 cloves
    Spinach, frozen, 0.5 cup
    Pepper, black, .5 tsp
    Chicken Broth or Bouillon, 2 cup (8 fl oz)
    Water, tap, 1 cup (8 fl oz)
    White Rice, long grain, 1 cup

Directions

Chop mushrooms. Combine all ingredients in a large saucepan. Bring to a boil then cover and reduce heat to a simmer. Cook for about 40 minutes or until liquid is absorbed and rice in tender.

Makes about 8 serving (1/2-cup each)

    Incredible!
    This was yummy! I did tweak it a little though. Sauted mushrooms, 1 clove garlic and 1 small onion to bring out flavor before adding to mix. Didn't need extra water. I also added a little parsley because I tend to put parsley in pretty much everything for color, flavor and extra vitamins! - 1/3/10
