Introduction

Excellent summer side dish or serve as a dessert with a scoop of vanilla ice cream. Excellent summer side dish or serve as a dessert with a scoop of vanilla ice cream.

Ingredients

    2 Tbsp brown sugar
    2 fresh lime or lemon juice
    1 cup fresh raspberries
    5 medium fresh unpeeled peaches, halved and pitted
    Vegetable cooking spray to coat grill

Directions

Makes 5 servings of 2 peach halves.

1. Combine sugar and lime (or lemon) juice in shallow dish; mix well
2. Add 1/2 of the raspberries and mash
3. Add peach halves, turning to coat
4. Marinate at room temperature, cut sides down for 30-60 minutes
5. Coat grill rack with vegetable spray, place peaches on medium hot grill, cut sides down(save marinade)
6. Turn peaches over after two minutes, then cook for another 15 minutes or until tender, basting once with half of the reserved marinade
7. Remove from grill
8. Stir remaining raspberries into remaining marinade and spoon over peach halves
9. Serve warm

    This was fantastic! I found that just a half a peach served with a scoop of fat free vanilla yogurt was plenty. I'm going to try with blackberries next time. - 9/5/10
