Ingredients

1 lb ground turkey (93% lean)
    1 teaspoon kosher salt
    2 teaspoons sage
    1 teaspoon thyme
1 teaspoon black pepper, fresh ground
1/2 teaspoon cayenne (for HOT sausage)
    1/2 teaspoon garlic powder
1/4c egg substitute or 1 egg
    cooking spray

Directions

Mix and form into 10 patties. Preheat large nonstick skillet to medium, spray lightly with cooking spray.
Fry sausage patties, covered, for about 4 minutes per side. 1 Serving= 2 patties.

Notes:
If you want HOT sausage, add the cayenne, I prefer mine without-- perfectly seasoned with a bite from the pepper, but not spicy.

I like to make a whole batch at the beginning of the week and store it in the fridge for breakfast all week long!

Try your local Whole Foods market for sage and thyme in bulk- you can get just what you need and it's much cheaper than the spice jars in the grocery store!
